Multiple diets exist that have cancer protective factors. The most important is to keep processed sugar out. Vegan, Paleo. etc. all seem to do that. Diets that reduce inflammation are helpful

Sorry you are having to deal with this. Neither profession IMO. Has your doc looked at scans for adhesions? With the gallbladder removed there is frequently modifications in diet needed (type of foods and not the quantity per se).

No it will not be a problem for the following reasons

You will be hooked up to a pulse ox to measure o2 saturation
If your o2 is low you will likely already be on oxygen which can be turned up
You will be lying on your side which provides improved breathing as opposed to on your back.
