O/T Food Porn (OK, it is corn but Rob in PA gets it)

Hi Guys

Just over 4 years from my last operation (VATS 27FEB2013) and coming up for my next CT Scan at the end of the month. Thus my stress levels are increasing and I tend to run more when I am stressed.
Thus I have had a good 80km week (about 50 miles) week running and I went for a long run on Sunday morning (about 25 km = 15 miles) and when I got back I was hungry.
Went to the fridge to see what I had and remembered that I was game and got some organic corn.

As Rob in PA knows, corn and I (for a lot of us) don't agree, despite the fact I absolutely love it. So I cut it off the cob, put it in a fry pan with a bit of oil, cumin, paprika and absolutely loved it. Corn is so nice and I was able to digest (OK, I chewed really well) with no blockages.

OK, I am trying to get some reactions but why not? I am sure some of us on the board don't mind a bit of light hearted fun from time to time?

I am constantly amazed that a corn kernel can enter and exit my digestive system
and remain utterly unchanged. Kinda like how Jodie Foster dropped through the spinning
rings of the machine built to alien speccies in the movie Contact.....

...corn messes with me nut!

Crikey Mate!!! You still remember my "corn incident"? LOL

For the record, yes, I gave it a burl last year in moderation and chewed, chewed, chewed, then chewed some more. Took me about 20 minutes to eat one fresh corn on the cob but I did it and passed (pun intended) with flying colors (mostly yellow) :shock:

I love corn in soups like chicken tortilla when it is very tender. I stay away from it out of cans.

Mmm.
I found this recipe for cornbread that incorporates corn cut off the cob and I'll never go back to regular cornbread again.

It can be made as described with all the vegetables, or just plain with whole corn. You can used canned corn, but we always have too much sweet corn In the summer and end up cutting it off the cobs and freezing it in bags to use for stuff like this.

That cornbread recipe looks really good Elizabeth. I've bookmarked it for future reference this summer. :mrgreen: :D :mrgreen:
Most recipes are so dry you might as well be eating cardboard. :roll:

Yes, I remember your corn incident as I had a similar incident at the same time. I was amazed that corn cold pass (or not as was the case) through me unscathed and undigested.

I am glad to hear from you Rob, your wife still happy that you are around and kicking? Your daughter a little more relaxed now that your health is not so precarious?

Hope you and your family are well and look forward to any more pictures you post, as I loved your road trip ones.

Speaking of cornbread, I made jalapeno/cheese cornbread a couple of wks ago for the first time...so good. Always made reg cornbread b4 which was good too. But this could be addicting. Used a can of creamed corn & white cornmeal, only 3Tbsp of oil (of course there was the fat in cheese.) Didn't need any butter or honey on top! However it took longer to cook...little too soft/wet. Next time will raise the oven temp or adjust liquid/dry ingredients if using creamed corn.
This makes me want to make it again, but no ingredients today. boohoo. :(
Corn off the cob would probably never make it into the cornbread @ my house, but sure it's wonderful :)

Hi Guys,
I am completely oblivious to any Corn incidences but that picture says it all,
I know it's not ideal but corn must be considered the Cockroach of the Food Chain, as I'm sure after a Nuclear Bomb a Corn Kernal would easiliy be found just chilling out under a pile of ash, with a cockroach next to it happily eating away.

Your wife is just happy you are alive, NED and happy.
Your daughter is just happy that you are alive and there for her.
Be happy that they are happy and need (want) you.
You don't need walkabouts with love like that my friend, just look after them and make them happy
