OT Grilling chicken

When grilling chicken, I like my charcoal to be red. Then I split a whole chicken, and toss that sucker right over the coals, on a rack of course. I season it with fajita seasoning and add hickory to give it that smoked flavor, similar to my ribs, only I like to quick cook chicken. I do not make chicken soup, then pull the meat out of boiling water, unless I'm fixin to make chicken and dumplings.

I let my dear hubby grill the chicken.....I don't have a clue what he does. It's great though. However, I make the best chicken and rice EVAH according to him. Season water and chicken with Montreal chicken seasoning and slowly boil it till its falling off the bone and DO NOT get rid of the water. All that bone marrow and fat is so very good for you. And I use Texmati rice. Best in Sugar Land. :D

Oh no, you are not in Sugar Land. I did my radiation at the Sugar Land Cancer Center with DR. Oh. I also do some tests at the Sugar Land Surgery Center. Actually I live pretty close to Hwy 6, and my wife is in Sugar Land all the time. HOWDY,Neighbor.

Yup, That's what I use my Weber for. It's the small one, and I have a hot plate on my gas grill for beans. Ya split that chicken right on down the middle, smash the bones, and plop it right over the fire, or in my case, mellowed down coals with hickory chips. So if I put a turkey, brisket, and pork butt, on the big pit, with ribs on the top rack. Steaks, and fajitas, on the grill, and split chicken on the small weber, with the corn on the cob, I too can feed my 5 children, and their offspring :roll:

P.S. I really don't want to hear how special your rotisserie is, cause I can't afford one yet :wink: KFC :shock: We do Popeye's Cajun down here in the south :roll:

I almost never grill chicken. Fried or pan fried and broiled is more my style. And brined when I have time. Though I also make butter poached chicken...

You guys are making me hungry. I love love love grilled chicken. My hubs makes the best, at least in my little corner of the world. :-)

just messin' with Michael here Kenny ....
gas grill ain't NO cheat !

Found out that unless I wanna babysit the chix full time Or eat carbon chix ... I go to indirect cooking OR over a drip pan filled with water / herbs / juice / spices ... whatever, so all the fat goes into the drip pan. NO flare ups, NO babysitting.... great flavour !

Just FYI I have done duck, goose and turkey for years like this. None o' them ole birds ever seen the inside of my oven for 15 years !
Christmas and Thanksgiving turkey in Casa CR are always done outside on the gas grill over drip pan. NO rotisserie.... ever ... too much fricking around with balancing a 20 pounder.

.....Word !....
( NO I really did not go to KFC tonight :shock: ... just grilled chix thighs with my latest fave sauce and marinade = Mauai Rib sauce. )

Mauai Ribs are really Azeka Ribs from the Azeka Place 2 strip mall on that great island. Once met Azeka sensei way back, and his family's tradition is now legendary across N America ...... BUTT you gotta get 'em fresh from Azeka place and grill them that night in Hawaii .....
just me I guess...

I finally got it figured out CR. I've been outside sweating over my propane pit, cooking some awesome chicken legs ( minus the 4 inch heels) and it dawned on me, you're heat source never runs out, it's natural gas. I have natural gas in the kitchen, and I'm allowed to cook in the kitchen if I so please. Perhaps it's your natural gas, that has you cooking outside :roll:

.... actually the NG hookups for BBQs are awesome. I also have NG clothes dryer ( economical ! ) and cooktop range, hot water tank, hot water heating system.

CR LOVES his natural GAS ! ... which is NOT to be confused with Diane's other topic on here recently :shock:

OK recipe time BUTT not chicken ( still gonna do some more Mauai Rib sauce thighs tonight .... yes Michael ... without the stilettoes ! :twisted: )
gonna try center cut pork chops with the Mauai sauce on the grill.
letcha know how it turns out folks.

BTW I am a gadget guy so I have a "beer can" chicken holder without the beer can.
Why waste a perfectly good beer can when you can support the economy and buy another "gadget" you don't have room to store ?????

empty beer cans are for smashing against your forehead or using as ashtrays, aren't they ?

Beer can chicken is supposed to be cooked with a full beer, at least that is what I've been told :roll: :roll: :roll: It helps to keep the cavity moist, the most important part about beer can chicken :shock:
